No time to fix breakfast? No problem. With classes starting this week everyone is short on time and thinking about breakfast is the last thing on the mind. But skipping breakfast is never a good idea. So, the next three posts on the blog are dedicated to breakfasts on the go that can be made in eight minutes or less. And, since it’s the end of August and blueberries seem to be on sale everywhere, I thought we’d start with this delish and healthy grab and go smoothie.
1 banana, peeled
1 cup blueberries, washed
1 cup milk, almond milk, or soy milk – your choice
1/2 cup ice (Alternatively you can freeze the fruit the night before and omit the ice)
Add all the ingredients to a blender and blend until smooth. Pour into a to-go cup with a lid and enjoy!
