Breakfast On The Go #2 – Avocado Toast With A Soft Or Hard-Boiled Egg

No one knows for sure where avocado toast gets its roots. Some say Australia, some say Los Angeles. But one thing is for sure, this buttery nutrient-dense fruit goes hand in hand with a piece of good toasted bread. Topped with an egg, it is so satiating, you won’t be thinking about lunch for a while.

To make soft boiled eggs, bring a pot of water to a boil and gently place the eggs into the pot. Cook them for seven minutes. Then remove them into a bowl of ice water to cool them down before peeling. If you prefer a hardboiled egg, cook for five minutes longer before removing to an ice bath. Alternatively, you can boil the eggs the night before and peel and slice them as you need them.

To slice an avocado, be sure to rinse the skin prior to cutting. Slice the avocado lengthwise on both sides and separate into halves. Remove the pit and scoop out the flesh with a spoon.

Ingredients:

2 slices good bread, toasted

1 avocado, skin washed and sliced, and flesh mashed with a fork

2 soft or hard-boiled eggs, peeled and sliced in half

Salt and pepper to taste

Directions:

Spread the mashed avocado evenly on two slices of bread. Top with the sliced egg. Sprinkle with salt and pepper.
